There’s no special knack to eating well in San Sebastián. Wander into a humble café and be stunned, as our readers were, by how spectacular the food can be almost anywhere in this Basque gastronomic destination. The pintxo bars, with their endless parade of delicious small bites like grilled squid and stuffed pimentón peppers, are the perfect spots to whet your appetite, get your bearings, and embrace the philosophy of Basque cuisine. La Cepa is famous for its cured meats, from silky jamón cut from one of the hefty haunches hanging from the bar’s rustic beams to the quick-cured chistorra, a traditional Basque sausage of pork and beef; Ganbara is the place we love for steamed percebes, the region’s famous gooseneck barnacles with a briny tang of the sea. As can be expected in a Spanish city, many newer pintxo bars are embracing molecular gastronomy, elevating the tapas plates to a new level of sophistication. We were particularly wowed by the tigretón—a glass of tomato purée and mussels topped with a béchamel foam and pork scratchings—from A Fuego Negro, a dramatic, black-walled bar that draws a cosmopolitan crowd. San Sebastián has its fair share of Michelin-starred establishments, too, like the stunning Akelarre, perched on La Concha bay, and Mugaritz, the farmhouse locale where Andoni Luis Aduriz will stun you with a multicourse menu of 20 plates. We still dream of dining on another plate of squid with onion and lemon sauce at Arzak, where the exceptionally skilled cooking of Juan Mari Arzak and his daughter Elena Arzak Espina takes the reworking of traditional Basque dishes to new heights. These options and more make San Sebastián a food lover’s dream.
